New vegan burger bar Blinders Burgers & Brunch will open by the end of the month in Las Vegas. The eatery is transitioning into the space of the second location of Vege-Way—a vegan drive-through founded by popular Las Vegas chef Kenny Chye, who will open a new eatery Chef Kenny’s Vegan Asian Restaurant this month. Blinders will feature a burger menu made with Impossible Foods’ plant-based Impossible Burger patties, products sourced from Minneapolis-based vegan shop The Herbivorous Butcher, local plant-based meat-maker No Butcher, and cashew-based cheese from Virgin Cheese. Blinders will also serve breakfast and a children’s menu, and host a weekend champagne brunch. “It’s the place vegans can bring their carnivore friends to eat,” owner Shantell Connor told local media outlet Vegans, Baby. “I’d love people to leave saying, ‘I can’t believe that was vegan’ and break down that barrier. That’s why we chose the name ‘Blinders.’”
